We've been working with Spencer Aidukaitis, our friend and talented coffee roaster/buyer/deep thinker who has been roasting for over a decade, to come up with roast profiles for the lighter oxidized oolongs we've been bringing in. Leaning on his knowledge of roasting and the science behind it, we have developed some very interesting profiles in both light and medium roasts. This is the third tea we've released from this project.
Using our 2025 winter harvest Jade Mountain, Spencer used an air roaster to perfect a medium roast that completely changes this tea. All the characteristics of a good oolong remain, floral, body and sweetness, just now with a darker lean. Notes of cereal milk, white grape and French roast coat the mouth steep after steep, making you wonder how roasted tea could've ever fallen out of favor in China and Taiwan.

BREWING INSTRUCTIONS
- Gong Fu - This tea works great in both porcelain and semi porous vessels. Since it is ball rolled, we recommend filling less than a third of the vessel with dry leaf. A transportive experience is also available when brewing grandpa style.
- Western - Use 1 heaping teaspoon per 8 oz of water. Add 195F water and steep for 4-6 minutes. Can be re-steeped a second time, adding 2-3 minutes to the original steep time.
